Ingredients

  • 4 Tortillas, whole wheat
  • 2 Eggs, hard boiled, chopped
  • ½ c Canadian bacon, chopped
  • ½ c Cheddar cheese, shredded, reduced fat
  • ½ c Bell pepper, chopped
  • Cooking spray

Directions

  1. In a large bowl, MIX eggs, Canadian bacon, cheese and bell pepper.
  2. DIVIDE mixture evenly between 4 tortillas.
  3. HEAT skillet to medium heat and SPRAY with cooking spray.
  4. COOK quesadillas in the skillet 3-4 minutes on each side or until golden brown.
