Ingredients

  • Cooking spray
  • ½ c Red onion, chopped
  • 1½ c Canadian bacon, chopped, 6 oz
  • 6 Eggs
  • 1 c Cottage cheese, low-fat
  • 2 c Cheddar cheese, shredded, reduced fat
  • ¼ t Garlic powder
  • ⅛ t Salt
  • ⅛ t Pepper
  • 3 c Hashbrowns, shredded, frozen

Directions

  1. WASH hands with soap and water.
  2. PREHEAT oven to 350 F.
  3. In a large skillet on medium heat, COOK onion and Canadian bacon until slightly browned.
  4. In a large bowl, MIX eggs, cottage cheese, cheddar cheese, garlic powder, salt and pepper.
  5. FOLD in hashbrowns, Canadian bacon and onion.
  6. POUR into a 9x13 baking dish sprayed with cooking spray. SPREAD evenly.
  7. BAKE for 35-40 minutes, uncovered.
  8. Let stand for 10 minutes before serving then CUT into 12 equal servings.
