Ingredients

  • Cooking spray
  • 2 c Bakery mix*, low fat
  • 1 ½ t Cinnamon, divided (1 t & ½ t)
  • 2 T Farina
  • ¼ c Sugar substitute blend
  • 1 c Apple, finely chopped, unpeeled
  • 1 Egg
  • ½ c Water
  • ½ c Applesauce, divided (¼ c & ¼ c)

*Bakery mix (baking mix) is a premixed baking product that includes flour, baking powder and other ingredients.

Directions

  1. PREHEAT oven to 375°F.
  2. SPRAY a 9x9 dish with cooking spray.
  3. In a large mixing bowl, MIX bakery mix, 1 t cinnamon, farina and the sugar substitute blend.
  4. In a medium mixing bowl, MIX apple, egg, water and 1/4 c applesauce.
  5. ADD wet ingredients to the dry ingredients. STIR until combined.
  6. POUR mixture into the baking dish.
  7. In a small bowl MIX 1/4 c applesauce and 1/2 t cinnamon. SPOON mixture on top of cake in various places, then use a toothpick SWIRL topping around.
  8. BAKE for 30 minutes or until toothpick comes out clean.
