Ingredients

  • Cooking spray
  • ½ c Flour, whole wheat
  • 2 ½ t Baking powder
  • ¼ t Salt
  • 1 T Sugar
  • 1 c Cornmeal
  • 1 Egg
  • 2 T Vegetable oil
  • ¾ c Buttermilk, reduced fat

Directions

  1. PREHEAT oven to 350°F.
  2. SPRAY an 8x8 inch baking pan with cooking spray.
  3. MIX the flour, baking powder, salt, sugar and cornmeal in a large bowl.
  4. In a separate bowl, BEAT the egg, oil and buttermilk.
  5. FOLD ingredients together gently until combined. Do not over mix.
  6. POUR the batter into the pan and BAKE until firm and lightly browned on top, about 20 minutes.
