Ingredients

  • Cooking spray
  • ½ c + 1 T Farina (creamy wheat/hot cereal), uncooked, divided
  • ½ c Flour
  • ½ c Whole wheat flour
  • 1 T Baking powder
  • 1 t Chili powder
  • ¼ t Cumin
  • ½ t Oregano
  • ¾ c Egg substitute or ¾ c Egg mix + ¾ c water
  • ½ c Milk, skim
  • 3 T Honey
  • 1 T Margarine, melted
  • ½ c Bell pepper, minced
  • ½ c Onion, minced
  • 1 c Corn, frozen, thawed
  • ½ c Cheddar cheese, shredded, reduced fat

Directions

  1. PREHEAT oven to 350°F. SPRAY a 9x13 inch baking dish with cooking spray and SPRINKLE 1 T of cereal in the bottom of the baking dish.
  2. In a large bowl MIX cereal, flour, whole wheat flour, baking powder, chili powder, cumin and oregano.
  3. In a medium bowl MIX egg mix/water or egg substitute, milk, honey and margarine.
  4. ADD wet ingredients to dry ingredients. STIR until moistened.
  5. FOLD in bell pepper, onion, corn and cheddar cheese.
  6. SPREAD into prepared pan and BAKE for 30-35 minutes.
