Ingredients

  • Cooking spray
  • 1 c Milk, nonfat
  • 1 T Lemon juice
  • ⅓ c Sugar
  • ¼ c Yogurt, vanilla, nonfat
  • 2 t Vanilla
  • ½ c Beets, canned, drained, mashed *measure ½ c mashed beets
  • ½ c Flour
  • ½ c Flour, whole wheat
  • ½ c Cocoa powder, unsweetened
  • ¾ t Baking soda
  • ½ t Baking powder
  • ⅛ t Salt
  • 2 t Powdered sugar

Directions

  1. PREHEAT the oven to 375°F and SPRAY a 12-cup muffin tin with cooking spray.
  2. In a large bowl WHISK milk and lemon juice and allow to sit for 5 minutes.
  3. To the bowl add sugar, yogurt, vanilla and mashed beets.
  4. To the bowl MIX in flours, cocoa powder, baking soda, baking powder and salt.
  5. SCOOP ¼ c of the mixture into a muffin tin. BAKE for 20-15 minutes or until an inserted toothpick comes out clean.
  6. SPRINKLE/DUST with 2 t of powdered sugar after they cool.
