Ingredients

  • Cooking spray
  • ½ c Flour
  • ½ c Flour, whole wheat
  • ½ c Cornmeal
  • ½ t Salt
  • 1½ t Baking soda
  • 1 Egg
  • ⅓ c Molasses
  • ⅓ c Brown sugar
  • ⅓ c Applesauce, unsweetened
  • 1 c Buttermilk
  • 1 c Raisins

Directions

  1. HEAT oven to 400˚F. SPRAY a 12-cup muffin tin with cooking spray.
  2. MIX together flours, cornmeal, salt and baking soda.
  3. In a separate bowl, MIX egg, molasses, brown sugar, applesauce, buttermilk and raisins.
  4. STIR the buttermilk mixture into the dry ingredients and mix well.
  5. FILL the prepared muffin tin ¾ of the way full and BAKE for 15-20 minutes.
