Ingredients

  • Cooking spray
  • ½ c + 2 T Brown sugar, divided
  • 2T Pecans, chopped, optional
  • 2 T Margarine, melted
  • 1½ c Pineapple, crushed, drained, divided (20 oz can)
  • ½ c Oats, divided
  • ¾ c Whole wheat flour
  • ¾ c Flour
  • 2 t Baking powder
  • ½ t Baking soda
  • ¼ t Salt
  • 1 t Cinnamon
  • 3 Egg whites
  • ¼ c Applesauce
  • 1 t Vanilla

Directions

  1. PREHEAT oven to 375˚F. SPRAY 12 muffin cup tin with cooking spray.
  2. In a small bowl, MIX 2 T brown sugar, pecans, ¼ c oats, ½ c pineapple and margarine together. PLACE 2 t of mixture on the bottom on each muffin cup.
  3. In a large bowl, MIX whole wheat flour, flour, baking powder, baking soda, salt, cinnamon and remaining oats.
  4. In a separate bowl, MIX egg whites, remaining brown sugar, applesauce, vanilla and pineapple together.
  5. ADD wet ingredients to dry ingredients STIR until combined.
  6. MEASURE ¼ c of batter and POUR over fruit mixture in each muffin cup.
  7. BAKE for 20 minutes. Let SET for 5 minutes.
