Ingredients

  • Cooking spray
  • 1 c Flour
  • ¾ c Whole wheat flour
  • 2 t Baking powder
  • ½ t Salt
  • ½ t Cinnamon
  • 1 Egg
  • 1 Egg white
  • ¾ c Brown sugar
  • ½ c Yogurt, vanilla, nonfat
  • 2 T Margarine, melted
  • 2 Pears, diced (~ 2 c)
  • ¾ c Granola, low fat, divided (½ c and ¼ c)
*Canned pears may be used.

Directions

  1. PREHEAT the oven to 400°F. Lightly SPRAY a 12-cup muffin tin with cooking spray.
  2. In a large bowl, WHISK together flours, baking powder, salt and cinnamon.
  3. In a separate bowl, WHISK together eggs, brown sugar, yogurt and margarine.
  4. MAKE a well in the center of the flour mix-ture, ADD egg mixture to the well and MIX until combined. Gently FOLD in ½ c granola and pears.
  5. SPOON batter (¼ c) into prepared muffin tin. SPRINKLE with remaining ¼ c granola.
  6. BAKE 20 minutes. COOL 5 minutes before removing from muffin tin.
