Ingredients

  • Cooking Spray
  • 1 c Flour
  • ½ c Flour, whole wheat
  • 1 pkg Vanilla pudding mix, dry, Sugar-free, fat-free, small box
  • 2 t Baking powder
  • ¼ t Salt
  • 1 ¼ t Cinnamon, divided (1t & ¼ t)
  • ¾ c Egg white, divided (6 T & 6 T)
  • 1 ¼ c Milk, skim, divided (¼ c & 1 c)
  • ¼ c Margarine, melted
  • ½ c Brown sugar
  • 3 Slices of bread, whole wheat, cubed small
  • 1 t Vanilla
  • 2 T Syrup, lite

Directions

  1. PREHEAT oven to 350°F. SPRAY a 12-cup muffin tin with nonstick spray and SET aside.
  2. In a large mixing bowl, WHISK flour, whole wheat flour, pudding mix, baking powder, salt and 1 t cinnamon.
  3. In a small bowl, WHISK 6 T egg whites, 1 c milk, margarine and brown sugar. ADD to dry mixture and SET aside.
  4. In a medium bowl, WHISK 6 T egg whites, 1/4 c milk, vanilla and 1/4 t cinnamon.
  5. FOLD bread cubes into milk/egg mixture and let SOAK.
  6. SCOOP 1/4 c batter into the muffin pan and TOP with about 1 T of soaked bread cubes.
  7. BAKE for 25-30 minutes until toothpick comes out clean.
  8. BRUSH with syrup and COOL in pan for 5 minutes before serving.
