Ingredients

  • Cooking Spray
  • 1 c Whole wheat flour
  • 1 c Flour
  • ¼ t Salt
  • 2 t Baking powder
  • 1 T Orange zest
  • ⅓ c Sugar
  • ½ c Applesauce, unsweetened (4 oz)
  • 1 Egg
  • 6 T Milk, skim
  • 1 t Vanilla
  • 1 c Cranberry sauce, mashed

Directions

  1. PREHEAT oven to 400°F and SPRAY a 12-cup muffin tin with cooking spray.
  2. In a large bowl WHISK flours, salt, baking powder, orange zest and sugar.
  3. In a separate medium bowl WHISK applesauce, egg, milk and vanilla.
  4. ADD the wet ingredients into the dry ingredients and MIX gently. FOLD in cranberry sauce and MIX gently.
  5. PLACE 1/4 c of the batter into each muffin tin.
  6. BAKE for 15-18 minutes or until muffins are golden brown.
  7. REMOVE from oven and let cool on a cooling rack.
