Ingredients

  • Cooking Spray
  • ½ c Flour, whole wheat
  • ¾ c Flour, all purpose
  • 1 T Baking powder
  • ½ t Cinnamon
  • ¼ t Salt
  • 2 c Bran flakes
  • 1 c Milk, skim
  • 1 Egg white
  • 1 c Apple, cored, finely chopped
  • ½ c Applesauce
  • ⅓ c Brown sugar
  • 2 T Margarine, melted

Directions

  1. PREHEAT oven to 400˚F, and SPRAY 12 count muffin pan with cooking spray.
  2. MIX flours, baking powder, cinnamon and salt in a large bowl.
  3. MIX cereal and milk in another bowl, and let STAND 3 minutes.
  4. To the cereal mixture, ADD egg white, apple, applesauce, brown sugar and margarine. MIX well.
  5. ADD wet ingredients to dry ingredients, and STIR until moistened.
  6. SPOON 1/3 c of the batter into each muffin cup, and BAKE for 20 minutes or until golden brown.
