Ingredients

  • Cooking spray
  • ½ c Orange juice
  • ½ c Oats
  • 2 T Orange zest
  • 3 T Margarine
  • ½ c Applesauce, unsweetened
  • ½ c Sugar
  • 2 Egg whites
  • ½ c Cranberries, dried
  • 1 c Flour, whole wheat
  • 1 c Flour
  • ½ t Salt
  • ½ t Baking soda
  • ½ t Baking powder
  • ½ c Walnuts, optional

Directions

  1. PREHEAT oven to 375°F. SPRAY a 9x5 loaf pan with non-stick spray and set aside.
  2. In a small bowl, MIX orange juice and oats, SET aside. In a large bowl, MIX zest, margarine, applesauce, sugar, and egg whites. STIR until the sugar is dissolved.
  3. In a medium bowl, MIX cranberries, whole wheat flour, flour, salt, baking soda, baking powder and walnuts, if desired.
  4. MIX juice and sugar mixture then ADD to the flour mixture and STIR until well combined.
  5. SPOON mixture into prepared loaf pan and bake for 25 minutes in preheated oven. If top browns too quickly TURN heat down to 325°F until done.
