2 lb lean bison, ground
1 onion, small, diced
2 cans tomato sauce, unsalted (15 oz. each)
½ t. black pepper
½ t. garlic powder
¼ t. cumin
2 t. chili powder
¼ t. cayenne pepper
1 ½ c. kidney beans, precooked, drained
In a large skillet, cook bison and onions until meat is brown and onion is translucent. Pour meat mixture in a colander over sink, rinse to remove fat. Wipe out skillet. Return meat mixture to skillet and add tomato sauce, spices, and beans. Let simmer on low at least 20 minutes.
