Peach Apple Crisp

1 20-oz can sliced peaches, light syrup, drained

2 medium apples, sliced

½ t. vanilla

¼ t. cinnamon

¾ c + 3 T. whole wheat flour

¼ c. brown sugar

3 T. trans fat free margarine, chilled

 

Preheat oven 350 degrees.  Spray a 9x9x2 inch casserole dish with non-stick spray.  Combine peaches, apples, vanilla and cinnamon in bowl.  Toss well and spread evenly in casserole dish. Combine flour and sugar in small bowl.  Cut in margarine with two forks until the mixture resembles coarse meal.  Sprinkle flour mixture evenly over fruit.  Bake until lightly browned and bubbly, about 20 minutes.

 

Makes 8 ½-cup servings.
