Light Vegetable Stock

7 c. water

1 large onion, chopped

2 cloves garlic, minced

1 large carrot, sliced

2 large celery stalks, sliced

1 medium potato, scrubbed and diced

1 c white cabbage, coarsely shredded

2 t. Italian herb mix

 

Place all ingredients in a large soup pot.  Bring to a simmer.  Continue to simmer gently, covered, over low heat for 40 - 45 minutes, or until the vegetables are tender.  Strain. 

This can be used in place of water in most any vegetable soup to give added flavor without salt, and it’s a great way to use up limp vegetables.

 

Makes 6 cups.
