1 lb. ground beef, extra lean
1/4 c. onion, chopped
1 can tomato sauce, no salt added (8 oz)
1 pkg. Taco Seasoning mix, Get Fresh! recipe
4 corn tortillas
1 c. cheddar cheese, reduced fat
1/2 c. tomatoes, chopped
1/4 c. sour cream, light
3 c. Romaine lettuce, roughly chopped
In a microwave, cook the meat and onions in a microwavable dish on high for 4-6 minutes. Stir every 2 minutes. Rinse and drain meat when cooked. Stir in tomato sauce and taco seasoning mix. Microwave 5-9 minutes until slightly thickened. Stir every 4 minutes. Transfer mixture to a bowl. In the same microwavable dish place 1 tortilla on the bottom and top with layers of 1/4 of each mixture of meat and cheese. Repeat 3 times. Microwave 2-5 minutes or until heated through. Place lettuce on a serving plate. Place enchilada casserole on top of lettuce. Top with tomatoes and sour cream and cut into 6 slices.
