Chicken Stroganoff

1.15 lb. chicken tenderloin, cut into 1/2 thick slices

4 oz. cream cheese, fat free

1/3 c. chicken broth, reduced sodium

1/4 c. balsamic vinaigrette dressing, light

1/4 c. Parmesan cheese, shredded

1 T. lemon juice

6 oz. mushrooms, sliced

1 c. peas, petite, frozen

1 t. basil, dried

4 c. egg noodles, cooked


Spray a large skillet with cooking spray.  Over medium-high heat, add meat and cook for 2 minutes on each side until lightly browned.  Reduce heat to medium and ad cream cheese, broth, dressing, Parmesan cheese, lemon juice, mushrooms and peas.  Stir until cream cheese is melted and well blended.  Cook 3 minutes or until sauce is thickened.  Sprinkle with basil and serve over noodles.  

Makes 14-1/2 c. servings.
