1 pkg. angel food cake, sugar free, cubed (10 oz)
3 T. orange juice
1/4 t. vanilla
2 1/2 c. milk, skim
2 pkgs. vanilla pudding, sugar free, (1.34 oz each)
1 1/2 c. whipped topping, sugar free, divided
2 pkgs. mixed berries, frozen, thawed, drained (16 oz each)
Place cake cubes in a large bowl. Mix orange juice and vanilla in a small bowl. Drizzle orange juice over cake and toss to coat. Pour milk into another large bowl and add pudding mixes. Beat with a wire whisk for 2 minutes or until well blended. Gently stir in 1 c. of the whipped topping. Place half of the cake cubes in a 2 quart serving bowl. Top with half of the berries and half the pudding mixture. Repeat layers. Top with remaining 1/2 c. of whipped topping. Cover with plastic wrap. Refrigerate until set.
