4 ½ c. canned/mashed sweet potatoes
1/3 c. non-fat evaporated milk
½ c. sugar
½ t. vanilla extract
2 eggs
¼ c. whole wheat flour
½ c. brown sugar
1/3 c. acceptable margarine
*Optional: 1 c. pecans chopped
Preheat oven to 350 degrees. Spray non-stick cooking spray in a 9x9-inch baking dish. In a large bowl, mix together mashed sweet potatoes, milk, sugar, vanilla, and eggs. Spread mixture into the baking dish. In a smaller bowl, mix together brown sugar and flour. Cut in the margarine until mixture is crumbly. *If using pecans, add here. Sprinkle topping over sweet potato mixture. Bake for 25 minutes or until golden brown.
Makes 10 ½ cup servings.
