Oatmeal Cookies

1 c. sugar

2 T. margarine, softened

1 egg or egg substitute to equal one egg

¼ c. applesauce

2 T. low fat milk

½ c. all-purpose flour

½ c. whole-wheat flour

¼ t. baking soda

½ t. cinnamon

1 c + 2 T. oatmeal

 

Preheat oven to 350 degrees.  Spray cookie sheets with non-stick spray.  In a large bowl, mix sugar and margarine.  Mix until well blended.  Add egg or egg substitute. Mix together.  Add applesauce and milk; mix together.  Scrap sides of bowl.  In another bowl, combine both kinds of flour, baking soda and cinnamon. Add to applesauce mixture, mixing until well blended.  Add oatmeal and mix together.  *If desired, add ¼ c. peanut butter. Drop by teaspoonfuls onto cookie sheet. Bake for 1-18 minutes.  Cool on wire rack. 


Makes 32 cookies.
