Cook 2 cups of white rice according to package instructions and set aside.
1 T. vegetable oil
5 mushrooms, sliced
4 green onions, sliced *keep white part separate from green*
3 eggs, slightly beaten
1/4 t. ginger (optional)
1/4 cup soy sauce, low sodium
1/2 cup peas
1/2 red bell pepper, diced
Heat oil in large skillet, adding mushrooms and the white part of the green onions. Saute, adding eggs and cooking until eggs are almost done. Add cooked rice, soy sauce and ginger, if desired. Stir until soy sauce is evenly coating the rice. Remove from heat and add peas, green part of the green onions. Stir and serve.
Makes 8- 1 cup servings.
